Start by tossing all the chutney ingredients into a pot & letting simmer until the cherries are soft but not mush & the liquid has mostly evaporated. While this is simmering combine all the Rub ingredients & give the steaks a good rub and allow to rest.
For the veggies; slice your potatoes thinly and grill on the BBQ (alternatively you could bake them first then slice & grill). Cut your peppers into triangles & slice your onions. Grill off these veggies too. Once slightly cooled layer the veggies with the potato & spear with a skewer to create a tower. Puree the roasted beets with the orange juice to create a simple bright vegetable puree. Blanch then sauté your beans.
To cook the steak, grill or broil it. Probe with a meat thermometer until reaching desired doneness.
For plating, layer the potatoes & veggies that you sliced and skewer to create a tower. Start with a potato to form a solid base. Surround this with your beet puree and place steak slightly on puree, then spoon chutney over the steak.
